Executive Chef Nguyen Minh Phuc officially assumes the role of Director of Culinary, marking a new chapter in the elevation of the culinary experience on Hon Tre Island.
Mr. Nguyen Minh Phuc brings over 20 years of experience in the culinary industry, having worked across diverse international markets with rigorous operational standards. This extensive background has shaped his adaptive leadership style, along with a refined understanding of regional palates and the nuances of diverse culinary cultures.
Since joining the resort, Chef Phuc has swiftly demonstrated his leadership capabilities by elevating service standards and sharpening the culinary direction, while laying a strong foundation for a more sustainable approach and distinct identity across each dining concept within the resort.
A commitment to sustainable gastronomy remains a guiding principle in his approach, reflected in efforts to minimize waste, optimize ingredient usage, and apply techniques such as fermentation and pickling. A hallmark of this direction is the “Boat-to-Table” concept, which fosters direct connections with local fishermen, while expanding partnerships with farmers, beekeepers, and organic producers to build a high-quality, locally rooted, and sustainable sourcing network.
Building on this foundation, the culinary experience at the resort goes beyond taste, evolving into a cultural journey where local identity is expressed through a modern, refined lens aligned with international standards.
This spirit is vividly embodied at Mamma Mia Italian Cucina, the resort’s Italian restaurant, where global cuisine is thoughtfully crafted using carefully selected local ingredients – creating a seamless harmony between regional authenticity and the essence of international gastronomy.
At Windy Restaurant, with a deep understanding of the preferences of Central and East Asian guests, he has strategically shaped the menu to focus on meat-centric dishes – bold in flavor yet highly approachable – thereby enhancing the overall dining experience for resort guests.
Under his leadership, the resort’s entire culinary portfolio has achieved remarkable growth in both revenue and operational performance.
“We place guest experience at the heart of our development strategy, clearly defining each dining concept – from Mamma Mia, our Italian restaurant, to Windy, tailored to suit Central and East Asian palates, and private in-villa dining experiences featuring grilled meats and seafood, ideal for warm and intimate family gatherings. Wherever our guests come from, they can always find familiar flavors or embark on new culinary discoveries,” shared Chef Phúc.
The appointment of Mr. Phuc as Director of Culinary not only recognizes his outstanding contributions but also marks the beginning of a new chapter – one where experience, identity, and sustainability continue to be elevated, further strengthening the resort’s position on the regional culinary map.
