Capella Hanoi has solidified its position as Vietnam’s premier culinary destination, securing multiple accolades in the 2024 release of the MICHELIN Guide Vietnam.
For the second consecutive year, Hibana by Koki has retained its one MICHELIN star, remaining the only Japanese restaurant in Vietnam to achieve this distinction. The restaurant’s success is attributed to its exceptional Teppanyaki cuisine and commitment to culinary excellence.
Two other venues within the hotel – Izakaya by Koki and Backstage, Northern Vietnamese Cuisine – have maintained their MICHELIN Selected status.
Retaining its MICHELIN recognition, Capella Hanoi stands alone as the only hotel in Vietnam with three restaurants acknowledged by the prestigious guide. Notably, it maintains the distinction of housing the country’s sole MICHELIN-starred Japanese Teppanyaki restaurant.
Chef Yamaguchi Hiroshi, the culinary mastermind behind Hibana by Koki and Izakaya by Koki, brings over two decades of experience to his role. His philosophy centers on three principles: umami (flavor balance), kansha (respect for ingredients), and omotenashi (exceptional dining experience).
“I am a perfectionist when it comes to truly authentic Japanese cuisine. I focus on harmony throughout the preparation process, ensuring every element of the dish blends seamlessly with the diner’s experience. Carefully selected ingredients, harvested at the right time and served at the ideal moment, are essential. Knowledge of the Japanese landscape and sourcing are key to creating a truly personalized dining experience at Hibana by Koki.”
Backstage, celebrating Northern Vietnamese cuisine, rounds out the hotel’s diverse culinary offerings, with Roasted Lang Hoa Lac Duck Breast with Seven Spices, Vietnamese Beef Shank Stew, Pork Loin “Mac Mat” Sauce and Rice cocktails.
Dennis Laubenstein, General Manager of Capella Hanoi, expressed pride in the recognition: “This continued acknowledgment by MICHELIN is a significant achievement for Capella Hanoi. It reflects our dedication to culinary excellence and commitment to creating unforgettable experiences for our guests.“
Capella Hanoi‘s consistent MICHELIN recognition not only cements its status as Vietnam’s top culinary hotel but also contributes to elevating the country’s gastronomic profile internationally, attracting discerning enthusiasts from around the world, showcasing Vietnam’s rich and diverse culinary landscape.
